Nitrates: nasty or necessary nutrient?

Separating fact from fad in nutrition can be a challenge – salt, fat, and cholesterol were once the bane of diet advice, but our evolving understanding of the complex science of nutrition has forced us to continuously re-evaluate the “facts.” The latest to come under scrutiny is nitrates. Typically associated with fertiliser and highly processed foods, nitrates haven’t exactly got the best reputation. However,  some kinds of nitrates are also found in high amounts in leafy greens and are actually vital for our functioning.

Here to help us sort out which nitrates to avoid and which to hunt out is Dr Catherine Bondonno, Senior Research Fellow at ECU’s Nutrition & Health Innovation Research Institute.
