Scale to Tail: A cookbook for sustainable Australian seafood

Scale to Tail  is a new local cookbook celebrating Australia’s love of seafood, while minimising the impact on the marine environment.

The book is the result of a collaboration between marine scientist Dr Jordan Goetze and his friend and fine dining chef Paul ‘Yoda’ Iskov, and provides recipes for ‘scale to tail’ cooking that also features native Australian ingredients.

Dr Jordan joined Taylah Strano on Breakfast to discuss cooking and the environment.
